Come sample innovative preparations by High Liner Foods, Ipswich Shellfish Group, Marder Trawling, Red’s Best and Seatrade International, including smoked dogfish, "shahk bite" nuggets, British fish 'n chips-style fried fillets, and center-of-the-plate braised steak medallions.
Chef Michael Leviton (former Chefs Collaborative chair and chef/owner of Lumiere and Area 4) will discuss this "underloved" species, which is abundant in our waters and sustainably fished by New England fishermen.
